Maple Chipotle Flank Steak Tacos

Ingredients

  • 3 chipotle chilis in adobo sauce, minced
  • ¼ cup plus 2 teaspoons Fuller’s Sugarhouse pure maple syrup
  • 5 tablespoons cider vinegar
  • 1 ½ teaspoons salt, divided
  • 1 ½ pounds grass-fed flank steak
  • 2 teaspoons canola oil
  • 3 cups finely chopped cabbage
  • ½ cup julienne-cut radishes
  • ¼ cup roughly chopped cilantro leaves

Instructions

  1. Marinade: Whisk chipotle, ¼ cup Fuller’s Sugarhouse pure maple syrup, 3 tablespoons vinegar and 1 teaspoon salt in a small bowl. Place flank steak in a large re-sealable plastic bag, and add chipotle mixture. Re-seal and turn to coat. Refrigerate for 12 to 24 hours.
  2. Preheat grill to medium-high heat. Remove steak from the marinade and discard any remaining marinade. Oil grill rack and add flank steak. Grill steaks, 5 to 7 minutes per side for medium rare, 6 to 7 for medium and 8 minutes per side for medium-well. Let rest 10 minutes while preparing slaw.
  3. To make the slaw: Whisk the remaining 2 teaspoons Fuller’s Sugarhouse pure maple syrup, the remaining 2 tablespoons vinegar, the remaining ½ teaspoon salt and oil in a medium bowl. Add cabbage, radishes and cilantro and toss to combine.
  4. Slice the flank steak into thin strips, across the grain. Fill tortillas with steak and slaw and top with avocado.

Maple Bean and Bacon Tacos

  • ¼ lb bacon (cut into ½ inch chunks)
  • 2 tablespoons cumin
  • 3 tablespoons cocoa
  • 2 tablespoons chili powder pinch cloves
  • ½ cup red wine
  • ¼ cup Fuller’s Sugarhouse pure maple syrup
  • 2 squares dark chocolate
  • 1 small, minced onion
  • 3 cloves (mashed)
  • 1 cup canned tomatoes
  • ½ tsp cinnamon
  • 4 cups cooked kidney beans

Instructions

  1. Saute onion and garlic with the bacon, add spices and let toast.
  2. Add in the remaining ingredients and bake for 40 minutes at 330 degrees.
  3. Serve with soft tortillas, arugula and guacamole.

  • 1 mango, peeled & diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 2 green onions, sliced
  • 2 tablespoons lemon juice
  • ¼ cup fresh cilantro
  • salt to taste
  • 12 tbsp Fuller’s Sugarhouse pure maple syrup

Instructions

  1. Mix all ingredients, add Sweet Heat to taste, and refrigerate.
  2. If you prefer a smoother less chunky salsa, combine all ingredients except Sweet Heat in
  3. a food processor. Process until it is coarsely chopped. Add Sweet Heat to taste. Refrigerate.

Maple Churros

  1. In a small saucepan over medium heat, combine water, 5 teaspoons Fuller’s Sugarhouse pure maple syrup, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.
  2. Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels.
  3. Combine ½ cup maple sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.
