Today is May 1, the beginning of another month during these uncertain times. As we continue to navigate these changing tides, the Fuller family wants to let you know how much your support has made a difference.

As a small, agricultural business in the northern White Mountains of New Hampshire, we have experienced our share of struggles these past few months. As restaurants and travel and tourism attractions have closed or significantly reduced operations, the wholesale portion of our business has drastically declined. We have relied on online orders to drive most of our sales and we can’t thank you enough for your continued business.

Cooking With Maple – April 2020

As we are all spending more time at home these days, many of us are looking for new hobbies to keep us occupied. Now more than ever is a great time to start finding new ways to incorporate the taste of maple into your every day cooking!

Pure maple is a healthy substitute for processed or refined sugar. With a lower glycemic index than refined sugar, maple syrup won’t lead to spikes of blood sugar. Plus, pure maple syrup is free of the top 8 allergens* and it’s gluten free.

Here’s a quick rundown on how to substitute refined, granulate sugar with our pure NH maple syrup:

Use 3/4 cup pure maple syrup for each cup of granulated, refined sugar. Reduce other liquid ingredients in the recipe by about 1/4 cup to compensate for the added liquid (maple syrup).

In case you have no idea what we’re talking about – we ran the Fuller’s Maple Choice Awards throughout the month of March. We asked customers to submit recipes that include our products.

Maple Cajun Shrimp

Maple Cajun Shrimp

A quick and easy grilled shrimp recipe using Fuller’s Sugarhouse pure NH maple syrup. Perfect for a summer night or date night meal.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • Juice of 1 orange
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1/3 cup Dijon mustard
  • Generous dash of liquid hot sauce
  • 1 clove garlic, finely chopped
  • 1 tablespoon Fuller’s Sugarhouse maple syrup
  • 2 tablespoons paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon cider vinegar
  • 1/4 cup olive oil
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Place shrimp in a large mixing bowl.
  2. In a small bowl, combine the orange, lime and lemon juice.
  3. Stir in the mustard, hot sauce, garlic, maple syrup, paprika, black and cayenne pepper, vinegar, and oil.
  4. Spoon enough seasoning onto the shrimp to coat it all over. Cover and refrigerate for several hours.
  5. Light a charcoal fire. Thread the shrimp onto metal or bamboo skewers.
  6. When the coal turns gray, place the shrimp on a hot grill rack and cook them for about 4 minutes, turning them several times, or until they are cooked through but still tender.
  7. Serve hot or cold with lemon wedge.

Maple Coconut Macaroons

Maple Coconut Macaroons

  • Prep Time: 20 Minutes
  • Cook Time: 25 Minutes
  • Total Time: 45 minutes

Ingredients

Scale
  • 1 14-oz bag sweetened flaked coconut
  • 3/4 cup sweetened condensed milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs whites
  • 1/4 teaspoon salt
  • 4 ounces semi-sweet chocolate, chopped (optional)

Instructions

  1. Preheat the oven to 325°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, mix together the coconut, sweetened condensed milk, maple syrup and vanilla extract. Set aside.
  3. In a separate bowl, using an electric mixer, beat the egg whites and salt until stiff peaks form. Then fold the egg whites into the coconut mixture using a spatula.
  4. Using a cookie scoop or tablespoon form heaping mounds onto the prepared baking sheets, spacing about 1 inch apart. Bake for 23 to 25 minutes until the tops and edges are golden. Let the macaroons cool for a few minutes then transfer to a wire rack to cool completely.
  5. To add chocolate: Melt the chocolate in a microwave-safe bowl at medium power. Stop and stir every 30 seconds, until just smooth and creamy. Dip the bottoms of the macaroons in the chocolate, letting any excess drip back into the bowl. Refrigerate for about 10 minutes to allow the chocolate to set. Store cookies in an airtight container at room temperature.

Cucumber Tomato Salad with Maple Vinaigrette

Cucumber Tomato Salad with Maple Vinaigrette

A delicious and juicy salad featuring Fuller’s Sugarhouse pure NH maple syrup, made in the Northern White Mountains of New Hampshire.

Ingredients

Scale

1 medium red onion, cut into narrow strips
2 large English cucumbers, cut into half moons
1-pound mix of grape tomatoes and yellow tomatoes, halved
10 – 15 large basil leaves, chiffonade (cut into long, thin slices)
1 cup of black olives, drained
½ cup fresh mozzarella, cubed

Salad Dressing Ingredients:
1/4 cup extra-virgin olive oil
1/4 cup Fuller’s maple syrup 
2 tablespoon apple cider vinegar
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt1/4 teaspoon black pepper

Instructions

In a large bowl add the onion, English cucumbers, tomatoes, basil, olives and fresh mozzarella. In a separate bowl, whisk salad dressing ingredients. When ready to serve, pour salad dressing over salad mix and toss.

Serve and enjoy!

NH Maple Butter Tart

NH Maple Butter Tart

This recipe was submitted by Sarah Moller for our 2020 Fuller’s Maple Choice Awards. Her recipe received the most votes from our customers and fans.

Sarah describes it as “a mapley play on a traditional Canadian butter tart— intensely mapley!” Give it a try!

Filling:
1/3 cup Fuller’s maple syrup
2/3 cup packed dark brown sugar
1/4 teaspoon coarse kosher salt
1/2 stick (1/4 cup) unsalted butter, very soft
1 teaspoon pure vanilla extract
1 large egg

Shortbread crust:
1 1/2 cup all-purpose flour
1/2 cup confectioners’ sugar
1 teaspoon kosher salt
1 stick cold unsalted butter, cubed
1 teaspoon pure vanilla extract
1 large egg

Instructions

Directions
Preheat oven to 425 degrees, and line a baking sheet with parchment paper. Add all crust ingredients to the bowl of a food processor, and pulse to incorporate. Once butter is broken down to pea-size pieces, turn the processor on and allow it to run until dough comes together in a ball and is clearing the sides of the bowl. Remove from mixer and divide into 4 equal pieces. Press shortbread dough into 4, 5” tartlet pans, flattening bottom and pushing up sides of pan with a small flat-bottomed measuring cup or a shot glass. Sweep away any excess dough that goes over edges of pan, so finished tart has a clean crust. Refrigerate until ready to use.

In a medium size bowl or glass measuring cup, mix maple syrup, brown sugar and salt. Add butter and stir until combined. Next, add vanilla extract and egg, and stir very gently until just incorporated. Do not use a mixer, and be sure to stir ingredients gently by hand, as not to incorporate air to the mixture. Carefully, divide filling between chilled tartlet pans no more than 3/4 full, and bake for about 19 minutes. Tarts should be set around the edges, but still jiggly and gooey in the center. Watch crusts carefully as not to burn exposed edges*

Remove from oven and allow to cool slightly before removing from tart pans and moving to a wire rack to cool completely (leaving in the pan for entire cool time will create soggy bottoms). Enjoy!
