Maple Candied Oktoberfest Nuts

Ingredients

  • 2 pounds of nuts – use a mixture of your favorite raw nuts such as pecans, walnuts, almonds and peanuts
  • 1 1/2 cup brown sugar
  • 1/4 cup Fuller’s Sugarhouse pure maple syrup
  • 1 stick (1/2 cup) butter
  • 12 tablespoons cinnamon
  • Pinch of salt
  • 2 teaspoons vanilla extract

Instructions

  • Place all ingredients in the crockpot and cook on high for one hour. Stir occasionally.
  • After one hour on high, turn the crockpot to low and let cook for at least 3 hours.
  • Once golden brown and crunchy, spread nut mixture on a baking sheet to cool before eating.

Maple Soft Pretzels

Maple Soft Pretzels

Pair this delicious Maple Soft Pretzel with our Maple Mustard Sauce!

Ingredients

  • 1 tablespoon Fuller’s Sugarhouse maple syrup
  • ½ package (1/2 tablespoon) active dry yeast
  • ¾ cup water (1/4 cup for proofing, ½ cup for dough)
  • 2 tablespoons olive oil or canola oil
  • 2 cups all-purpose flour
  • 1 teaspoon sea salt
  • 2 tablespoons baking soda (this is for the boiling water NOT the dough)
  • 6 cups water, in a pot (for boiling)
  • Coarse salt (for sprinkling)

Instructions

  • Proof the yeast: Put ¼ cup warm water, maple syrup, and yeast into a small cup and stir until yeast dissolves. The yeast should foam.
  • Make the dough: Using a mixer or hand-kneading, mix the flour, salt, oil, proofed yeast mixture, and an additional ½ cup of water (for a total of ¾ cups water). Run mixer on medium low for about 5-6 minutes or knead dough ingredients for about 8-10 minutes.
  • Brush the inside of a large glass bowl with a little bit of oil. Form the dough into a ball and put it in the bowl. Cover and allow the dough to rise for about 40 minutes.
  • Preheat your oven to 450 degrees F.
  • Uncover your dough and punch it down few times.
  • Prepare a cookie sheet with parchment paper on it. Set aside.
  • Prepare an oiled work surface. Cut the dough into 4 or 6 equal and roll each out to an 18-24-inch-long rope.
  • Grab the ends of each dough rope to make a U shape, then form into a pretzel shape.
  • Put 6 cups of water into a pot and dissolve the 2 tablespoons of baking soda into the water and bring to a rolling boil.
  • Drop pretzels, one at a time, into the pot. Each should sink a little then rise up. Wait 30 seconds, then lift out using a slotted spoon and place each onto the cookie sheet. While still wet, sprinkle liberally with coarse salt. Take a sharp knife and cut a 4-6 inch slit along the bottom of the pretzel.
  • Bake for about 14 minutes or until golden brown. Serve with a side of Fuller’s Maple Mustard for dipping.

  • Blue Cheese: smoked blue gorgonzola, buttermilk blue
  • Breads: sliced baguettes, hard sesame breadsticks, whole wheat crackers, water crackers, crostini squares, flatbreads, bagel or pita chips
  • Charcuterie: paper thin prosciutto, hard salami sticks, pepperoni
  • Jams + Chutneys: hot pepper jelly, sour cherry preserves, bacon marmalade, apple and berry chutneys, hummus
  • Fruits + Nuts: grapes, dried apricots and pears, shelled pistachios, smoked almonds,
  • Tarts + snacks: olives, marinated artichoke hearts, roasted red peppers, balsamic glaze, pickled jalapeño peppers, whole grain mustard, hot and sweet mustard

Instructions

For the Maple Cream and Apple Baked Brie

  1. Preheat the oven to 375 degrees F. Spray a baking dish or pie plate with nonstick spray.
  2. Spread the apple butter on top of the brie cheese. Gently spread the maple cream on next. Layer on the apple slices and sprinkle them with cinnamon, then drizzle with maple syrup.
  3. Bake the brie for 10 to 15 minutes, just until it almost bursts and the cheese is melted. Drizzle more maple cream or syrup on top right before serving. Serve with lots of crackers, crostini and breadsticks!

For the Cheese Board

  1. Place cheese on the board first and then add in bowls with spreads or nuts. After that, fill in your empty spaces with other items you purchased.

Bacon Wrapped Dates with Maple Syrup

  • 32 pitted dates
  • 3264 shelled pistachios 1-2 per date
  • 1 lb. lean thin bacon, each strip cut into 34 pieces depending on size of date
  • 1 C maple syrup for drizzling

Instructions

  1. Preheat oven to 350 degrees.
  2. Make a slit in each date and stuff with 1-2 pistachios.
  3. Wrap each date with a piece of bacon so that the bacon just overlaps.
  4. Place seam side down on the cookie sheet.
  5. Brush lightly with maple syrup.
  6. Bake until bacon is crisp, about 5 minutes each side.
  7. Dates can be made ahead of time and frozen.
  8. Bake for 8-10 minutes per side if frozen.
  9. Drizzle with maple syrup.

Maple Apple Chips

Maple Apple Chips

The perfect back to school snack!

Ingredients

Scale

34 medium Apples
(Fuji, Pink Lady, Cortland or Gala work well)
1/4 cup Maple Syrup
1 tsp. fresh ground Cinnamon

Instructions

Preheat oven to 200 degrees.

Mix together maple syrup and cinnamon in a small bowl. Rinse and core the apples, using an apple corer. Then slice a quarter off the top and bottom of the apple. Slice the remaining apple using a mandolin set to 1/8″ thickness. Spread apple slices evenly across two baking sheets. Use parchment paper for easier clean-up. Using a pastry brush, coat apple slices with maple syrup.

Bake for approximately 1 1/2 – 2 hours, rotating twice. Baking times will vary depending on apples and how thick you sliced them. Maple Apple Chips will crisp up slightly once cool.

Maple Kettle Corn

Maple Kettle Corn

Ingredients

8 cups popped popcorn
¾ cup  Fuller’s Sugarhouse Pure Maple Syrup
¼ cup corn syrup
¼ cup butter
Sea salt or kosher salt, to taste
Cayenne, to taste

Instructions

Preheat oven to 300 degrees. Line a large baking sheet with parchment paper.
Pour popcorn into a large bowl, then set aside.
Over medium heat, bring the maple syrup and corn syrup to a boil and cook to 240 degrees. Add butter, salt and cayenne pepper.
Pour the maple mixture over the popcorn and toss to coat all pieces, then transfer to baking sheet.
Bake popcorn for 30 minutes, stirring every 10 minutes.
Once cooked, let cool completely and then store in airtight container.

BBQ Maple Meatballs

Ingredients

1 cup ketchup
2/3 cup apple cider vinegar
½ cup vegetable oil
½ cup Fuller’s Sugarhouse Pure Maple Syrup
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tsp chili powder
1 tsp salt
¼ tsp cayenne pepper
2 lbs Homestyle meatballs

Instructions

Add frozen meatballs to a crockpot.
In a bowl, combine all other ingredients and stir with a whisk.
Pour the sauce over the meatballs, then gently toss to coat all meatballs.
Cook on low for 2 hours, then serve.

Maple Teriyaki Chicken Bites

Maple Teriyaki Chicken Bites

Ingredients

4 tbsp soy sauce
2 tbsp hoisin sauce
4 tbsp Fuller’s Sugarhouse Pure Maple Syrup
2 tbsp rice vinegar
2 lbs boneless, skinless chicken breasts (cut to bite sized pieces)

Instructions

Preheat oven to 350 degrees.
In a bowl mix the soy sauce, hoisin sauce, Fuller’s Sugarhouse Pure Maple Syrup, and rice vinegar. Stir well.
Place the bite sized chicken into the bowl and stir to coat all pieces.
Transfer the chicken bites onto a baking pan and cook for 20-30 minutes or until done.
Serve with ranch or blue cheese dipping sauce.

Pigs in a Blanket

A great appetizer for football games, family gatherings and holiday parties! Pairs great with our Maple Mustard Sauce.

Ingredients

1 can crescent rolls
1 package of little smokies sausages
¼ cup Fuller’s Sugarhouse Pure Maple Syrup

Instructions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Open the crescent rolls and unroll them onto the baking sheet.
Cut each triangle of dough into thirds, then place a sausage in the wide end of the dough and roll it up. Repeat with all remaining pieces of dough.
Brush each sausage roll with Fuller’s Sugarhouse Pure Maple Syrup, then place in the oven.
Bake for 10-15 minutes, re-brush with maple syrup if desired.
Serve immediately.

Maple Bacon Chicken Quesadilla

Maple Bacon Chicken Quesadilla

Ingredients

2 pounds boneless, skinless chicken, cooked and cut
1 ½ cups of shredded Mexican cheese
6 strips of our Maple Bacon recipe, which features Fuller’s Sugarhouse pure maple syrup.
12 flour tortillas
Optional: vegetables such as green and red peppers, corn, onions

Instructions

Preheat grill to medium-high heat and lightly oil the grill gate.
Begin building quesadilla. Start with a tortilla, sprinkle a thin layer of cheese, then bacon and chicken and desired vegetables. Add more cheese before placing the top tortilla on.
Grill until crispy and golden brown, about 4 minutes per side.
Repeat with remaining ingredients.
Cut quesadillas in wedges and serve.
